SPAGHETTI WITH FRESH TOMATOES, SHALLOTS AND ARUGULA

This is one of my favorites pasta dishes, not just because it's delicious, but for how quick and easy it is!

INGREDIENTS FOR 3 SERVINGS

-250 gr of high quality spaghetti

I used Spaghetto Quadrato by

@pastalamolisana

-3 cups ripe grape tomatoes

-1 shallot

-1/2 cup EVOO

-2 cups or arugula

-Fresh basil

-Lots of grated @parmigianoreggianousa

@parmigianoreggiano

-Salt


METHOD

1.Start the sauce while your pasta water is close to a boil. This sauce only takes 5 minutes.

2.Heat a pan on medium heat and add the EVOO.

3.Add the sliced shallots, sweat for a couple of minutes, then add 1/4 cup of pasta water.

4.Once they soften, add the tomatoes, basil and salt.

5.When the pasta is cooked half way (about 5 minutes), add it to the sauce with 1 or 2 ladels of pasta water.

6.Cook pasta while tossing it, until al dente, and sauce is creamy.

7.Turn the heat off, add arugula, toss with pasta so it wilts.

8. Add fresh basil, and as much Parmigiano Reggiano as you like, toss, plate, grate more Parmigiano (it's never enough!❤) and done!
