Bowties With Smoked Salmon

Guys, if you haven't made this pasta yet, please do! I guarantee, it will become one of your favorites!


INGREDIENTS FOR 2-3 PEOPLE

🔸️250 g of best quality bowtie pasta

🔸️150 g smoked wild sockeye salmon

🔸️500 ml heavy cream

🔸️1/2 cup of white wine

🔸️1 shallot

🔸️2-3 slices of lemon

🔸️2 tbsp butter

🔸️1/4 cup Parmigiano Reggiano or Grana Padano

🔸️2 tbsp minced flat leaf Italian parsley

🔸️2 tbsp of water

🔸️1 tsp salt (taste and season sauce after it has finished cooking, as salmon can be salty)


METHOD

1. Add butter to a hot pan and sweat the minced shallot.

2. Add 2 tbsp of water to help.soft3rn the shallot.

3. Add chopped salmon and cook for a few minutes.

4. Add white wine and let evaporate.

5. Add cream and cook on low, for 10 minutes, until it reduces and thickens.

6. Start cooking the pasta.

7. Add lemon slices to cream and cook for 5 minutes.

7. Remove lemon slices.

8. Add 1/2 tsp of salt if needed. Salmon can be salty plus you are adding cheese.

9.Once pasta is SUPER al dente add it to the pan and toss for 2 minutes.

10.Turn heat off, add cheese and toss for a couple of minutes.

11.Taste again for seasoning and adjust.

12. Sprinkle with minced parsley.

13. Plate, garnish withe lemon slices and enjoy!
