Orange and Fennel Salad

This is one of my absolute favorites salads! It's not just amazingly delicious and super easy to make, but also incredibly beautiful šŸ˜

It's perfect served with fish or as a light starter to a beautiful meal! Fennel aids digestion so it's also great served at the end of a meal.

INGREDIENTS 4 people

-2 fennel bulbs

-2-3 oranges

-1/4 cup of pomegranate seeds

-Fresh mint

-A drizzle of EVOO

-Salt


METHOD

Thinly slice the fennel, peel oranges and slice to your liking.

Arrange nicely on a platter, sprinkle pomegranate seeds, salt and EVOO.

Garnish with fresh mint and you're done!
