FARFALLE WITH ZUCCHINI, SPECK, CREAM AND ZUCCHINI BLOSSOMS

This is such a delicate, yet satisfying pasta dish.

Smokey, creamy, fresh and bright, summer in a one bite😋

INGREDIENTS FOR 3-4 PEOPLE

-250 g farfalle

-75 g speck

-1 medium zucchini

-2 cups grape tomatoes

-250 ml heavy cream

-125 ml white wine

-1 clove of garlic

-60 ml EVOO

-1/4 cup fresh basil

-1/2 tsp salt

-6 zucchini blossoms

-1/4 cup Pecorino Romano

METHOD

1. Slice speck into strips

2. Cut zucchini in 1/2 " dice

3. Heat up a pan, add speck and cook until it starts to crisp up

4. Add zucchini and cook for a few minutes

5. Add halved tomatoes, basil, halved garlic clove, salt and wine

6. Cook until alcohol evaporates, about 5 minutes, tuen heat on low, remived garlic and add cream

7. Let the cream reduce by half

8. When pasta is almost al dente add it to the sauce and toss

9. Top with grated Pecorino Romano and toss

10. Plate, top with the sauce and fresh basil and enjoy!
