Potato Gnocchi

INGREDIENTS:

1 Kg yellow potatoes

300 gr All-purpose flour


METHOD:

1.Wash potatoes and boil for 20-30 minutes or until tender.

2.Drain and let cool and dry in the same pot.

3.Peel and pass through a potato ricer.

4.Add the rest of the flour and mix until combined.

It will still be sticky so flour your work surface and gently knead.

5. Cut in 4 and each 4th in 4 more pieces, so you'll have 16 pieces

6.Roll each piece into a rope, cut into little pillows and shape each pillow by gently pressing and rolling towards you, or using a gnocchi board

7. Place the gnocchi on a well-floured, clean towel on a tray and freeze. Once frozen, store in freezer bags. Or cook right away.
