Sweet, jammy, slightly spicy, and absolutely delicious!
WOW! The jalapeños added a savory, fresh layer to the sweetness of the tomatoes, and a slight spice that complimented all the elements of my toast.
Make it! It's super easy and you can do 1000 things with it!
INGREDIENTS
🍅3 Cups of ripe grape or cherry tomatoes
🍅2 jalapeños
🍅1 shallot
🍅6 garlic cloves
🍅1 cup EVOO
🍅6 thyme sprigs
🍅1/2 tsp of salt
METHOD
1. Wash and dry tomatoes
2. Slice shallot and jalapeños
3. Peel garlic cloves
4. Add everything to a baking dish.
5. Add salt, thyme, and EVOO
6. Stir everything and cook in a 300 F oven for 2 hours.
7. Store in refrigerator covered in oil for up to a month or freeze for up to 3.
