These ribs are to die for!! Super tender and flavorful!
INGREDIENTS
•2 racks of pork ribs
•2 Tbs granulated garlic
•2 Tbs granulated onion
•2 Tbs smoked paprika
•2 Tbs sweet paprika
•2 Tbs salt
•2 Tbs dry oregano
•1 Tbs black pepper
•1/2 cup of mixed fresh herbs (parsley, oregano, basil, rosary, thyme, cilantro)
•1/4 cup EVOO
• 1/2 to 1 Cup of water
•2-3 Tbs mayo
•1/2 cup Harissa
METHOD
Preheat your oven or BBQ to 350F. Line a baking sheet with aluminum foil, making sure you have enough to make a nice tight package. Arrange the ribs on the baking sheet. Place some water and EVOO in a food processor or blender and add the herbs and spices, you might have to add more water to make a nice thick paste.
Spread the paste on both sides of the pork ribs. If you have leftover paste, you can keep it in your fridge for up to a week or freeze and use it on any meat. Seal tightly and bake at 350 between 2 and 2.5 hours. You might have to add a little water to the pan if the ribs are drying out. Once ribs are done baking, open the package and brush mayo on top. Broil for 10 minutes. Let them rest, top with a drizzle of Harissa and a squeeze of lime and Buon Appetito Amici!
