I love one pan meals, especially on days I work all day! I love that I work in a kitchen and can actually make dinner while I'm at work! 🙌
Tonight's dinner was Italian sausage, chicken breast and veggies roasted in one pan, served with, crispy Parmigiano potato wedges.
INGREDIENTS FOR 6
🥘3 medium/large chicken breasts cut in half
🥘5 Italian sausages cut in half
🥘1 lbs brussel sprouts cut in half
🥘1 large red pepper cut in strips
🥘1 lbs cremini mushrooms cut in quarters
🥘1 red onion cut in thick slices
🥘1 cup cherry or grape tomatoes cut in half
🥘1/4 cup EVOO
🥘1 cup white wine
🥘2 tsp garlic granules
🥘2 tsp smoked paprika
🥘2 tsp oregano
🥘1 tsp salt
METHOD
Add all ingredients to a large pan and toss with your hands making sure all veggies and meat are coated with the oil and spices. Roast at 400F for 30 minutes or until thermometer inserted in the thickest part of the chicken reads 160F.
INGREDIENTS FOR PARMIGIANO POTATOES
🥔1 Kg waxy potatoes cut in wedges
🥔1/4 cup EVOO
🥔1/4 cup Parmigiano Reggiano
🥔2 tsp seasoning salt
🥔1 tsp garlic granules
🥔1 tbsp dry parlsey
METHOD
Add all ingredients in a bowl, toss with your hands making sure all potatoes are evenly coated with cheese/oil/spice mixture.
Roast at 400F for 20-30 minutes depending in the thickens of the potatoe wedges.
Serve with a salad and enjoy!
